Had a solid meal at Paul & Elizabeth’s in Northampton, Massachusetts a few days ago. I enjoyed the seitan dish (noodles, veggies, seitan). Kinda reminded me of Pad Thai. Pretty good. Generally though I llooooovveee Northampton. It’s super cute and very vegan-friendly. 🙂
