Loved trying some of the vegan options at Mexican Radio in upstate NY. They have two locations (one in Hudson and one in Schenectady) – with about a dozen vegan/vegan-izable options on the menu. One of the owners if vegetarian and she’s super jazzed on making sure they have awesome vegan options. The other day I tried their chili pie, Baja no fish tacos, deep fried flautas, apple taquitos, and a coconut jalapeño margarita! So good!
