-
Wow, that water. Gorgeous!!
-
Beautiful!
-
SO lovely!
-
Thanks, ladies!! I was the most breathtaking of sights!

Was it easy to eat vegan there ?
-
Hi Laura! While it was challenging to find things like tofu, tempeh, seitan ect at the particular resort we stayed at, there were plenty of other vegan options. Also, on the day we took the tour of the Tulum and Coba ruins, they provided a lunch. Authentic Mexican style tacos at this little Mexican restaurant…..very easy to make vegan! Overall, I…[Read more]

What goes up must also go back down…..my thoughts from the top of the Coba ruins temple in Mexico…I was suddenly thinking the way UP was easier! I made it back down alive though….good thing for that, since I do love my life hahahaa! 🙂
-
So cool!
-
Was crazy awesome…and even a little scary! Lol…I remember looking behind me about halfway up, and people already looked like ants! And almost a straight shot down. Totally so glad I did it though!
-
And even got a yoga pose selfie in at the top! Haha…for my employers yearly ‘healthy selfie’ contest. Plus I entered it here too 🙂

Breakfast at Marie Catrib’s in Grand Rapids, MI. Tofu scramble, season potatoes, kale, veggies and toast complete with Marie Catrib’s special peanut butter and jam on one side. And peanut butter and banana stuffed (vegan) French toast on the other! This fine establishment recently mentioned as one of the top vegan / vegetarian restaurants in the…[Read more]

Oh man….to diiiie for!! 🙂 There are so many great places for vegans now in Grand Rapids, Kristin! You should totally add GR to your list hehehe…..here is that link that mentions all the great establishments in GR! 🙂 http://matadornetwork.com/pulse/13-worlds-best-cities-vegetarians/
-
Yes!! I’ve been to GR before; though it was about 3+ years ago. I’m sure it’s even more vegan friendly now. 🙂
-
Yes! GR has really come a long way! The Brick Road in Eastown vegan pizza, vegan club and the ‘Brick Road Burger’ are the bomb! Stella’s has the best chik’n burger, tofu meatloaf, chik’n wings (which are really huge potato wedges smothered in this this amazing sauce!)…..and Bartertown has amazing breakfast also! Not mentioned in the…[Read more]

I’ve only been to Grand Rapids once for a day trip to their zine fest a few years, and I managed to get to both Bartertown and Brick Road in that magical, magical day. The Bartertown breakfast sampler was so so good, I still think about it whenever I order a breakfast plate somewhere, and hope it will stand up by comparison.
-
Waaaay awesome, Jaclyn….and too funny! Yes. Bartertown sure does have some amazing food…as does Brick Road! So great you got to experience both while you were here!

Coati high five! Hehe…ran into this little fella on my trip to Mexico last month. One of my favorite parts of the trip…the beautiful nature trail through the jungle…..right at the resort! Critters galore and I was in heaven! The coatis were my favorite. So silly and sweet! Loved the iguanas too. And all the animals! 🙂
