We had the pleasure of sampling a 4 course vegan tasting menu at Hotel Raphael in Rome.
Their menu is completely gourmet vegetarian and vegan.
This particular masterpiece was just one of the dishes created by head chef Fabrizo Marino.
Peach cake with basil cashew ice-cream, berries, and aquafaba meringue.
We’re not sure why every gelateria in Italy isn’t serving basil ice cream, but we were thrilled to try this creamy vegan cashew based dessert.
One would expect that a basil based ice cream would be overpowering, but it was quite subtle and well paired with berries and the peach cake.
I’ll be trying my hand at basil ice-cream once we return home.

@alan and I sampled a delicious basil apple juice at Farm Spirit in Portland, and it made me wish there were more basil-infused treats out there for me to eat up, because it was incredible. If I saw vegan basil gelato somewhere on a menu, I’d be pumped! Now I know what I’ll be trying in my home ice cream maker, too– thanks for the inspiration! 🙂
We need more sweet dishes with basil out there! I once made a strawberry basil smoothie and it was delicious, just saying 😉

I’ve tried lettuce ice cream before, which was better than i expected, but not spectacular. It was the first time I even considered leafy things becoming ice cream. I bet basil ice cream is amazing, I’m such a fan of basil!

The Basil Ice Cream was so good and I really wish we could have had the whole tub of it 🙂
The lettuce ice cream was at Dirt Candy, in New York. The food was way overpriced, but it was all good, and I even liked the brussel sprouts in the tacos, which I’m usually not a big fan of.
